COLD BREW

The cold brew method is a cold extraction process that takes a very long time (at least 8–12 hours). The tool used is quite striking; it’s called the Cold Dripper and consists of three parts: an upper glass chamber where cold water and ice are placed, a central container for ground coffee, and a lower carafe to collect the final product. The water passes through the coffee one drop at a time, at a rate of about 8 drops every 10 seconds. The drops pass through the ground coffee, capturing its characteristics, and the result is a coffee rich in aromas and flavors. It can be stored in the refrigerator for up to a week.

For cold brew, people usually prefer very aromatic, fruity, and floral coffees, such as those from Africa—primarily Kenya and Ethiopia.
