FREQUENTLY ASKED QUESTIONS

Coffee

Our coffees come from the coffee belt, primarily from Central and South America (more balanced and chocolatey profiles), Africa (more aromatic and fruity), and, when available, from certain areas of Asia (more spicy and full-bodied). The origins vary depending on the harvest season. On every package, we always list the country, region, processing method, and sensory notes, so you can make an informed choice based on your taste preferences and brewing method.

We source our coffee directly from the origin: every year, Maurizio visits a different plantation to meet the farmers and taste the lots on-site.

A specialty coffee scores over 80 out of 100 in evaluations by qualified tasters, according to the SCA protocol, and is traceable back to the farm. A specialty coffee reflects a specific origin, variety, and processing method—and you can taste it in the cup. A commercial coffee, on the other hand, is produced with volume and price in mind.

Yes. Coffee is a fruit, and our selection depends on the harvests: it changes constantly, and new specialty coffees arrive every week.
Roasting

A light roast preserves the acidity and the fruity and floral notes; a darker roast adds body and bitterness, but masks the differences between one coffee and another. For each coffee, we develop a profile that respects its character.

Yes, at our small roastery on Via Quarenghi in Bergamo. We roast the coffee to order, so the coffee you receive is always fresh.

It tastes best after a few days of resting following roasting and retains its aromas for several weeks.

Store it in its original package with the valve and zipper, tightly sealed, in a cool, dry, dark place. It’s best to avoid the refrigerator and grind it just before preparing it.
Purchasing and Preparation

You can choose it whole bean ( Beans ) or ground for a moka pot, espresso, or drip coffee. If you have a coffee grinder, we recommend the Beans, because it better preserves all of the coffee's characteristics.

Coffees from Central and South America, which are well-balanced and have a chocolatey flavor, are ideal for espresso and milk-based drinks. African coffees, which are aromatic and fruity, are best enjoyed as filter coffee. If you have any questions, feel free to message us on WhatsApp.
