Sweetness and body are the successful ingredients of this coffee. To call it sweet is reductive--it is almost cloying, with an intense plum jam note and an initial acidity reminiscent of cherry, even more noticeable when extracted by the espresso method. It is medium to full-bodied, with excellent structure and a juicy, syrupy mouthfeel reminiscent of real berry juice. From a coffee from Rwanda, one would expect mainly notes of sugar brown, and instead here is the wow effect that surprises: floral enzymatic flavors, with a direct olfactory aroma of hibiscus and a refined aftertaste of purple fruit.
