A wonderful Peruvian coffee that takes you by surprise: an initial burst of acidity that’s anything but subtle, clearly evoking the sensation of citrus, particularly orange.

Medium body and a creamy mouthfeel are the main characteristics of this coffee. The flavor profile then evolves toward sweetness, with notes of brown sugar, almond, and ripe, almost dried fruit, such as figs. The finish offers a decidedly pleasant and desirable caramel note.

A coffee perfect for anyone who loves the purple and brown “hues” in coffee, as it’s incredibly rich and enveloping. The most surprising flavor—the one that best highlights the sweetness—is the sensation of dulce de leche: a guaranteed “wow” factor for this Peruvian coffee.

What a wonderful discovery. And the variety itself is a big surprise: little-known, it was discovered in 1997 by Grimanes Moralez Lizana on her farm in La Coipa, Cajamarca. The plant likely originated from a spontaneous mutation of the Bourbon variety. The name “Marshall” is an acronym created by combining the first and last names of the discoverer’s family.
