A coffee we called balanced, because from the taste point of view between acidity, sweetness and bitterness reigns a great synergy and complicity.
Medium/high initial acidity reminiscent of citric orange acidity, evolution on the taste buds in sweetness, with the sensation of ripe peach and apricot.
Slightly bitter finish with hints of crème caramel, very pleasant and desirable, giving a wow effect in the cup.
Medium/low body, definitely a coffee that in the filter brings out its full potential.
This washed Ethiopia also reflects the initial expectations: a coffee that we would call "everyday", to be drunk lightly and at the same time with the knowledge of enjoying an excellent product.
The great secret of this elegance and sweetness in the cup is due to an innovative process devised by the farm's young owner, Mikasi: during fermentation in the tank, he inserted the skins of previously dried cherries, carefully controlling the fermentation time. After endless testing, he managed to create a coffee with a wow effect, which is where this cloying sweetness comes from.
