A coffee that we call balanced, because from the taste point of view between acidity, sweetness and bitterness reigns a great synergy and complicity. It opens with an initial acidity reminiscent of red apple, then evolves gently on the taste buds, with hints of ripe banana and apricot. The finish is slightly persistent, with notes of marzipan: a pleasant and desirable closure, giving a feeling of perfect balance in the cup. The body is medium. On the direct ortonasal nose, a very noticeable lemon note strikes, accompanied by mainly enzymatic scents. What can I say...a decidedly interesting Ethiopia. It might seem unbalanced among the various flavors, but that is where the surprise effect of this coffee lies: its great balance in our oral cavity. Its strength? Simplicity.
