A coffee defined by us as balanced because from the taste point of view between acidity ,sweetness and bitterness a great synergy reigns. Medium-high initial acidity reminiscent of citric orange acidity, then evolution on the taste buds into sweetness where that ripe peach and apricot sensation emerges. Slightly bitter finish with hints of creme caramel, but definitely very pleasant desirable giving the wow effect in the cup. Medium-low body, definitely a coffee that in filter brings out its potential. This washed Ethiopia also mirrors initial expectations, a coffee that I would call an everyday coffee, without having to put too much effort into tasting and always drinking with the knowledge of an excellent coffee. The great secret of this elegance and sweetness in the cup are due to an innovative process carried out by the owner of the Farm: we are talking about a guy, Mikiyas, who wanted to experiment with this new process, putting during the fermentation phase in the tank together with water the skins of the cherries previously dried for a controlled fermentation time. After endless tests he managed to create a coffee with a wow effect, that's where this cloying sweetness comes from... for those who like sweet coffees this is TOOOOOOP.
