It explains the basic concepts concerning green coffee, the cultivation of the plant, processing, transport, storage and arrival at a roastery. It also includes an introduction to cupping and raw classification.
It delves into green coffee in more detail and focuses on the professional skills needed for those who work with green coffee on a daily basis. It is divided into three areas: Principles of coffee cultivation and processing; Introduction to green coffee classification; Green coffee contracting and warehouse management.
It is suitable for people who have worked for at least two years in a green coffee-related job. It builds on the knowledge gained in the Intermediate level and prepares the student for management jobs in the industry. Good knowledge of other modules of the System Coffee Diploma, in particular Sensory and Roasting, is highly recommended for those wishing to tackle this level.
The Foundation course lasts 1 day.
The Intermediate course lasts 2 days.
The Professional course lasts 3 days.
